Gör så här:

Koka fullkornen enligt anvisningar på förpackningen. Låt svalna. Blanda ihop och arbeta samman alla ingredienserna till degen i ett par minuter, gärna i en assistent. Låt jäsa under bakduk i en timme. Dela degen i 4 bitar. Forma dem till bullar genom att vika in kanterna runt om mot mitten. Vänd upp på en bricka.

Låt jäsa i 20 minuter i rumstemperatur.

Rör ihop ingredienserna till tomatsåsen.

Sätt ugnen på 275°. Skiva zucchini och champinjoner. Bryn zucchinin i oljan. Salta och peppra. Riv över vitlök. Kavla ut pizzadegarna. Bred på sås. Fördela grönsaker på pizzorna. Dela mozzarellan i mindre bitar och lägg på. Grädda i mitten av ugnen i 3-6 minuter tills den har fått fin färg. Toppa med mangoldskott.

Tips!

Små bitar av färsk grönkål är också gott att lägga på pizzan. De blir alldeles frasiga när de gräddats.
